Daniel Reichel is always experimenting with his own creations with enthusiasm and curiosity. His favorite combination: local products that enter into a liaison with Mediterranean components. This is demonstrated by dishes such as orecchiette with wild boar sausage and Parmesan crumbs, or lamb shank with sautéed artichokes and rosemary potatoes. Game delicacies come from hunters in the region, fresh or smoked fish is supplied by Forellenhof from Mellingen and lamb by the Bucha agricultural cooperative. Even ice cream specialties are created together with a farm: The milk is from the producer, the quinces from the Landgrave's trees - the result is an excellent quince sorbet, served with a crème brûlée.
