In the footsteps of famous greats - at Ettersburg Castle Restaurant
"Some days ago I had lunch among foresters and hunters, [...] my landlady showed up and treated us with splendid fish and crayfish, although there is no water here far and wide". This is what Friedrich Schiller wrote in 1800 about Ettersburg Castle, where he lived for a short time. Today, in its basement, there is a restaurant that, with its offerings of game and fish, is reminiscent of the former hunting lodge.
Young chef with maximum inspiration
Heiko Schaller, owner of the Schloss Ettersburg restaurant, proudly introduces us to his chef Tim Habermann. He is only 31 years young, but by no means a beginner anymore. After his apprenticeship at a Mercure hotel, he cooked for 10 years at the Augustiner on the Krämerbrücke in Erfurt. Since 2018, he has been cooking and baking with his team of three in Ettersburg. He sums up his ambition to work as a chef: "I want to achieve that our guests are satisfied and like to come back. That goes for afternoon strollers as well as guests in the gourmet restaurant." He prefers to use fresh and regional products for this, from wild garlic that grows outside the door to local fish.
"When you really enjoy cooking, something magical can happen."
For Tim Habermann, cooking is a craft and not witchcraft. So it's no surprise that the kitchen does not use any convenience products at all. Habermann and his team make almost everything themselves, from wild garlic oil to whiskey and onion jam. "This is the only way I can create contrasting dishes for our guests. I know that they can clearly taste the clear flavors that only homemade products have," he comments on his maxim.
Culinary delights in the UNESCO World Heritage Site
Whether in the terrace café after a bicycle tour, in the elegant dining rooms after a concert or at the reception in the baroque White Hall - culinary care at Ettersburg Castle is characterized by individuality and an awareness of fresh and regional products.
We definitely recommend a walk through the English landscape garden, which with its scents awakens the desire for Tim Habermann's culinary variations. Because as the saying goes: if you can taste the soul of the food, you can recognize the soul of the chef.
