The first mention of the village of Seebach appears in a document concerning a donation of land to Würzburg Abbey in 861. It later came into the possession of Hersfeld Abbey and thus under the supervision of the Archbishopric of Mainz. According to legend, the castle belonging to Seebach, today's bird sanctuary, was built by Bebo von Seebach and completed in 1120. The first documented mention dates back to 1307, when the Archbishop of Mainz gave half of the castle in the Niederseebach camp to the brothers Hermann and Albrecht von Seebach for 66 silver marks. Traces of the past indicate that the castle was originally a moated castle.

Village life is culturally diverse with the annual carnival, a traditional Easter bonfire on Maundy Thursday and the fire department festival on May 1st. At Whitsun, the Pfingstburschen erect the Maie (a spruce tree over 20 meters high). The Schoßmeier, the children in Year 7, make wreaths of fresh greenery and flowers, which are distributed to all families in the village on the morning of Whit Sunday, accompanied by brass band music. A musical morning pint, children's dance and Whitsun dance provide entertainment throughout the weekend. In autumn, the Seebach village theater invites you to several humorous performances. On the 2nd weekend of Advent, the traditional Advent market takes place in the Seebacher Heimatscheune.
